While I agree with your general premise, that what you see on sites like Instagram is often false, it is possible for some people to eat what they want and stay slim. However, slim and healthy are not the same thing. A person can be slim and very unhealthy.

People's metabolisms differ. I'm almost 51. I'm slim. Always have been. Seems like I always will be. In fact, I've often gone out of my way to try and gain weight (I don't do that anymore, I'm cool with how I look now). I also love to eat! And, yes, I do eat whatever I want. I have always had a fast metabolism. I don't have an eating disorder (I say this because that's the next thing that usually comes up in a conversation such as this). That being said, when I say I eat what I want, what I want is usually pretty healthy. I like veggies and fruit and lean protein. But, I also like beer, wine, pizza and cheesecake and if given the chance, can easily polish off a full bag of dill pickle chips.

You're likely correct about many of the so-called influencers. I guess I just wanted to point out that I am thin, I do eat what I want and I do live with freedom and openly share my struggles.
